I love tacos made from bull cheek, tongue, tripe, lips, assholes, hooves, you name it. I hate intestines and I struggle with liver unless its in a pate or wurst.

Ox tails are next level delicious especially the soul food style with brown gravy and rice.

Crispy tripas tacos are the only way I'll do intestines. Sweetbreads are another offal I like.

As I learned long ago in the hood Swinging Steak whole smoked ox tails take them to another level.

Another ghetto food I like are pork neck bones. Brine them the smoke em. They are good like that even better in soups after smoking.

My uncle has a way of grilling small intestine tripe that is outstanding. I don't know how he prepares it, but every time we'd butcher a steer, it was a treat at a family gathering.

First off you need to use a baby meat goat. Best goat ever is wrapped in maguey cactus leaves & cooked in a pit underground! Stewed is third, right after a paper split & spitted baby goat.

The reason goat is the #1 meat world wide is the are the cheapest animal to raise. That and the dunecoons can fuck them as long as they sell the meat to strangers.

Years ago when I was working in Clear Lake, Texas (by NASA)I was the old dude on the job, manager was was a white trash dude other white dude was even worse. The others were mescins of various ages. Youngest mescin was a former gang enforcer from Galveston.

One day everyone was talking about music & the white boys just figured me for trailer park yodeling. So they asked what I was listening to & I told them. No one believed me but the gang banger was really surprised by my taste in music. Half was old school he knew from his mom who was my age the other half was a lot of what he listened to. We actually became great friends. Taught that boy a bunch about guns.

I have less problems listen to Norteña music, simply growing up around all the pollocks in Chicago.
