I love tacos made from bull cheek, tongue, tripe, lips, assholes, hooves, you name it. I hate intestines and I struggle with liver unless its in a pate or wurst.
Ox tails are next level delicious especially the soul food style with brown gravy and rice. |

My uncle has a way of grilling small intestine tripe that is outstanding. I don't know how he prepares it, but every time we'd butcher a steer, it was a treat at a family gathering.

I’ve eaten Mexican goat barbecue a few times at parties and quinceaneras and I’ve determined I prefer not eating rubber goat meat.
