I start with a diamond 400, then 1000
Then move to the whet stones, at 1000, 1500, 3000, 4000, 6000, 8000, and 10,000
Then a leather strop with red jewler's rouge.

My wife thinks her kitchen knives get the job done.

No can't say that some thing I ever pursued. I did however work with a knife for 36 years and sawing motion was pretty much the first thing you break an apprentice of doing.

I was never a surgeon nor played one on TV but I'll wager they don't saw with scapulas either.

Because it's a very short knife. If it had been an 8" or longer I could have done it in a single slice.

I posed a question on another forum recently about the best knife sharpener out there. Tired of using stones, and wanted something I could keep all of my daily ranch chore knives sharp with, as well as my wife’s nice kitchen knives that I’ve neglected for years.

The Work Sharp was highly recommended. I had never heard of it previously. I have one coming for Christmas from my wife.

Do yourselves a favor and watch the Project Farm episode on sharpeners.

If sharpening is your job or your life's passion, stones IMO.

If sharpening is a fun hobby - work sharp and others are great.

If you just want sharp knives that have utility, nothing expensive is really needed for that.

I try to keep my knives sharp at all times. I use a steel before cutting anything. I have a cheap fish hook diamond stone from Basspro that I keep in my toolbox. It beats everything for a quick and dirty way to sharpen an edge. It has a fine side and course side. It will get me through a deer or cardboard until I can sharpen the knife properly.

I try to keep all my carry knives sharp, but cutting the wrap off of round bales every day and various other chores is hellacious hard on a knife.

I have admittedly neglected my wife's nice kitchen knives. Too damn many to take care of when my normal work week the past 20+ years is 85-90 hours.
