The old man (RIP).. taught me how to sharpen my knives when I was 6.
We had the arkansas stones back then. I found as the "stone" started wearing and got a belly in it.. it changed the angle of the edge on every swipe. Then diamond stones showed up. They were super expensive at the time.. but they were leaps and bounds better than whetstones. I still have that diamond stone.. does not see a lot of use these days. I bought 3 "Dia-sharp" stones to replace it. After 40+years.. any blade and a diamond stone, I will produce a hair popping edge on a blade. No guides, no rods, no bs.. with enough practice you know the angle to hold and can feel when the steel is being bitten correctly by the stone. All I ever use. |

I have several sharpening stones, some for tools, some for knives, I like my knives sharp, we have a lot of kitchen knives, all types, manufacturers, I basically use only three of them, not the expensive ones either but they hold the edge well. Last year I got a very expensive set which hasn't seen much use yet.

Im due for an expensive set myself.. been using junkers for the last 5 years.. they suck.

I have two chef's knives that were given to me by a Spanish chef who was friend of ours, he died a couple years ago in Valencia where he was from. I should have bought a couple when I was in Toledo Spain, they are famous for their blades but I didn't have time to shop around so I passed, by the time I got to a store it was just a tourist trap. I have learned that just about any knife is good as long as you keep it sharp and take care of it, which my wife doesn't do, she'll cut right on the counter granite....Please...use a cutting board.
