If it tasted like crap, it's TexMex. If it was good, then it wasn't.

I'm experimenting with beef tongue today. Going to make smoked birria enchiladas or tacos to see if it'll work for a bbq contest at the end of the week. If it's good, then I'll enter the recipe. If not, I'll figure something else out.
