That's a tough situation to defend against. A dozen people suddenly start trashing the place and grabbing anything that's not nailed down. No weapons were displayed, so deadly force is risky. As soon as you pop one of them in the head, you're the bad guy. The deceased perp's grade school graduation photo is plastered all over the news and they become the martyr for a twisted culture of theft and violence.

When I worked retail, we were trained to just step aside. Any deviation from that meant instant termination. We got hit a number times by organized groups. It was always Blacks. One time a group of 3-4 showed up just as the store opened, smashed the cell phone display case and made off with everything there. The company responded by disciplining the hourly worker for stocking too many phones in the glass case. That really pissed me off.

Instead of trying to defend against these events, large retailers have implemented all sorts of measures to simply slow down the perps. While it has made it more difficult for organized theft rings, it's more work for employees, tainted the shopping experience and raised prices. The simple act of purchasing a cell phone required a manager to retrieve it from a locked steel cabinet in the back of the store. All these anti-theft measures add time, cost and complication to every transaction.

Low-level thieves normally worked alone or sometimes in pairs. One common tactic was the simple "push-out". They'd simply fill up their cart and calmly bypass the checkout, hoping nobody notices. Even when someone did notice, they'd keep walking and wouldn't even turn around. Another tactic was to run out the emergency exits, quickly load the stuff in a waiting car and speed off.

Another tactic that Black thieves would use with great effectiveness is to create a scene. Whenever a Black thief was questioned or challenged, they'd respond with angry shouting, false accusations of racism and all sorts of emotional rhetoric. There was always an underlying threat of violence. Most of the time, it worked.

You're right. The enemy has no fear because the honest proprietors have no means of defense. Since the owners are elderly, the smartest move would be to close shop, cut their losses and retire. I retired at age 56. These people were in their 80s! Unless you absolutely LOVE your job or HAVE to work to put food on the table, I see no reason to continue, especially in a place where people want to do you harm.

I don't know about you, but I'd rather die peacefully in my sleep than at the hands of a knife-welding shit bird just out of prison.
